The VP18 is a non-insulated proofing and holding cabinet, which has been constructed of 100% high-quality stainless steel. The cabinet will give you even heat distribution and quick recovery times. It comes with tray slides that are adjustable, and can hold eighteen 18" x 26" sheet pans, or thirty-six 12" x 20" hotel pans (or a combination of both).

This proofer uses 33% less energy than the competition and can reach holding temperatures 16% faster. The outside will be cooler to the touch than other proofers because the stainless steel will keep the heat in. For more information, check out Vulcan's brochure.
