The Vollrath Cayenne 1220 and HS-Ultra "heat n' serve" food rethermalizers are full-sized, and can be ordered with an output of either 1000 or 1440 watts. The 1000 watt unit allows two units to be plugged into a 20 amp service. The "HS Ultra" model is a 1440 watt rethermalizer which offers a quicker preheat and more rapid rethermalization.

The Cayenne full-size heat 'n serve rethermalizers are designed to take a container of cooked food from a chilled state through the HACCP "danger zone" in less than 90 minutes. The temperature will be maintained above 150° Fahrenheit (65.6° C) when the food product and pan or inset are used with a standard pan or inset cover; the proper water level is maintained in the well; and the food product is stirred regularly. With the proper insets and lids, these machines could be placed front of house to act as a warmer once the food is reheated.
