A commercial general-purpose Japanese-style knife for meats, vegetables, and fish

Taylor Precision has designed a sturdy, reliable Santoku knife for restaurants and commercial use. It has been made with a semi-polished high-carbon German steel and has a 7" blade (17.7 cm), which is the most common size. "Santoku" means "three virtues," because this knife can handle meat, fish, and vegetables. Or maybe it was named this because you can use it to slice, chop, and dice. Whatever the origin of the name, it's a general-purpose knife which some chef's prefer to the a chef knife, and many chefs in Asian restaurants prefer this style of knife. Some other names for this knife would be Santoku bōchō or Bunka bōchō. It's a well-balanced knife with a nice soft handle that has some give in your hands. The high-carbon German steel means that you'll be able to keep it extremely sharp for a long time. Carbon steel can be honed to an extremely fine and lasting edge. And while carbon steel is softer than a stainless steel blade, that actually means it's going to be easier to sharpen and easier to keep sharp longer. This knife has kullens (those dimples in the blade) which limits the food sticking to the blade, making this knife perfect for chopping and dicing vegetables: people love using these blades for root vegetables and meat.
