The Omcan 31834 is a non-insulated proofer cabinet that can hold up to 35 full-size sheet pans (18" x 26" pans). It includes the electronic heater box.

This proofer can also function as warming cabinet because it includes a separate control box (item 39528). With the control box attachment, this holding cabinet can reach temperatures up to 180 degree Fahrenheit.
